The ins and outs of pancakes

It comes as no surprise that pancakes are the most requested breakfast in our house. As far as breakfast foods go, they’re especially great because the leftovers will also work as a yummy snack later.

Let’s begin with the ins of a perfect pancake for a toddler: banana, egg, flour and milk is all you need!

Why banana? It gives the pancake a touch of sweetness while adding vitamins, minerals and an extra boost of fiber, so we like it as a refined sugar alternative. Eggs are of course an eggcellent source of iron, protein, fat, Vitamins A, D, E, B12 and choline - a lot of nutrition to pack into a pancake. As for milk, it’s a helpful way to get a little closer to the two servings a day we’re looking for. Flour gives the pancake some structure to make it a perfect toddler food that’s easy to hold! Alternatives to wheat flour, egg and dairy also work great, so pancakes are an easy and forgiving go-to that can be put together with lots of kitchen staples.

The outs of those pancakes are where you should get ready for a mess. In our house, we like berries, berries and more berries. You can avoid most of the mess and put some raw berries on the side, but then it’s really just a plain pancake with a side of fruit — if you’re feeling brave, pile your little one’s pancake with a big heap of lightly steamed berries for a good sauce that gets all over.
